I've said that before, and will say it here again - being paid next to nothing per hour and made to rely on tips for what is essentially labour intensive work is, in my view, pinnacle of exploitation. Irrespective of how it is couched - the fact remains that an employer has engaged an employee to perform certain work reward for which depends on goodwill of clients! I really think that is not right.
